As one of Australia’s most respected boutique wine producers, we’re very lucky that our tiny biodynamically-farmed estate has become synonymous with wines of elegance, terroir and enduring character — a true expression of its unique granitic soils and cool-climate elevation.
Our approach is deliberately traditional and minimal-intervention. The vineyard is hand-pruned and fruit is hand-picked. Fermentation uses only indigenous yeasts, and maturation takes place over 18–20 months in tight-grain French oak, about half of which is new each year. This philosophy isn’t just marketing — it’s a steadfast commitment to letting the land speak through the wine, creating bottles that are expressive, textured and ageworthy.
Julian’s vision has always been to craft wines that are true before they are great — wines that embody the essence of Beechworth’s soil, climate and biodynamic vitality. Today, our estate range — including benchmark releases like Genesis Syrah, La Chiave Sangiovese and the intriguing Un Segreto blend — has earned acclaim from critics and sommeliers alike.
But perhaps the most gratifying testament to their success isn’t in awards or scores — it’s in the fact that our wines now grace the wine lists of some of Victoria’s most coveted five-star dining venues.
What separates our wines from many regional producers is not just the quality of the wine, but how widely and thoughtfully it’s been embraced by Australia’s top restaurants. Today, our wines are featured in four out of five five-star Victorian restaurants that prioritise a world-class wine program — and in each venue, multiple wines are offered to pair with the cuisine.
Here’s a closer look at those venues:
Amaru — Melbourne
A standout in Melbourne’s contemporary fine-dining scene, Amaru is known for its meticulously curated wine list that spans classic old-world bottles alongside boundary-pushing contemporary producers. With over 700 wines in its cellar, Amaru’s sommeliers champion nuanced, terroir-driven wines — and our biodynamic expressions fit perfectly within that ethos.
Our elegant Syrah and textural white offerings have become a favourite pairing choice alongside Amaru’s refined tasting menus, bringing regional Australian character to the heart of the city’s dining tapestry. Wines featured: Genesis – 2009, 2012, 2018; Chardonnay – 2022; Ingenue – 2022; Chenin – 2021; Sparkling Genesis – 2015; and Aqua Santa.
Brae — Birregurra
One of Australia’s most respected restaurants, Brae is not just a dining destination — it’s an experience rooted in hyper-local produce and disciplined seasonality. Brae’s wine list reflects the same philosophy: wines that speak of place, tradition and nuance. Our biodynamic reds, in particular, echo Brae’s commitment to heritage, restraint and dialogue with food, making them ideal partners for the restaurant’s ever-evolving tasting menus. Wines featured: La Chiave – 2008, 2009, 2010, 2013; Genesis – 2014; and Chenin – 2022.
Vue de Monde — Melbourne
At the pinnacle sits Vue de Monde, one of Australia’s most iconic fine-dining institutions. Its wine list is uncompromising, global in scope and relentlessly curated. Our inclusion here — across more than one wine — is a powerful endorsement of the winery’s international calibre. Wines featured: Genesis – 2015; and Aqua Santa.
Yiaga — Melbourne
Extending this recognition further is Yiaga, the newly launched, independant venture from Head Chef Hugh Allen. Yiaga represents a modern evolution of the Vue philosophy, and our presence across both venues underscores the depth of trust placed in the winery’s consistency, elegance and ability to perform at the highest level. Wines featured: Genesis – 2010, 2018, 2019; Un Segreto – 2006, 2010, 2013, 2015; Sparkling Genesis – 2015; Sparkling Allegro – 2017; and Aqua Santa.
Circl Wine House — Melbourne
Circl has rapidly become one of the city’s most influential wine destinations, winning Australia’s Wine List of the Year as well as Best Wine List, Victoria and several other accolades. Part of its acclaim stems from a deeply considered showcase of Australian producers — especially those championing sustainable, biodynamic and terroir-led wines. Our wines appear alongside other cult and classic wines, with multiple vintages offered by the glass or bottle, reflecting both breadth and depth. Wines featured: Chenin – 2018; La Chiave – 2019; Growers Chardonnay – 2013 (magnum); and Aqua Santa.
For a boutique producer, from the smallest wine region in Australia — Beechworth, it’s amazing to see our wines featured, not just singly, but with several wines, in these top-tier restaurants — is no small achievement!
From our biodynamic roots in a high-altitude Beechworth vineyard to the wine lists of Melbourne’s most lauded restaurants and regional institutions, our wine journey is a testament to vision, persistence and authenticity. Whether enjoyed alongside a progressive tasting menu in Melbourne or a pastoral feast in regional Victoria, these wines continue to surprise, delight and elevate every glass.
